Job Title: Head Chef – Sushi Restaurant

We are seeking an experienced and passionate Head Sushi Chef to lead our culinary team in delivering authentic and high-quality Edomae-style sushi. The ideal candidate will have a strong background in traditional Japanese culinary techniques, especially in handling and processing seafood, along with the ability to engage warmly with customers and work collaboratively with colleagues.
Bachelor degree
Menu Planning & Cost Control
Design and innovate authentic sushi menus.
Conduct cost calculations and manage food cost efficiency.
Ensure quality and consistency across all offerings.
Inventory & Kitchen Management
Handle inventory planning, stock control, and ordering of ingredients.
Oversee procurement of premium, fresh ingredients.
Maintain cleanliness and hygiene in kitchen areas.
Preparation & Collaboration
Conduct preliminary preparation of ingredients.
Work closely with team members to ensure timely and accurate dish presentation.
Customer Engagement
Interact with guests during meal service, introducing dishes and enhancing the dining experience.
Demonstrate a communicative and approachable personality.
Minimum 3 years of experience as a Sushi Chef.
Proven expertise in Edomae sushi techniques.
Excellent fish handling and processing skills.
Graduation from a recognized university.
No specific post-graduate or specialized course required.
Japanese and English (spoken proficiency)
