He has to make basic south Indian veg non veg starters (chicken 65, podi idli, paneer majestic & more), south Indian Briyani (like ambur Briyani, Dindigul briyani) rasam, sambar, poriyal, variety rice like tomato rice, lemon rice, tamarind rice. He has to make puzhi kolambu, mor kozhambu, sambar, Coot, beans usili. Must know to make idli/dosa batter, aapam batter. He must know to make sweets payasam, ada Pradham, carrot halwa.
